Ingredients for Each Cocktail
- 2 ounces bourbon or whiskey
- 1 ounce simple syrup
- Dash of bitters
- 1 peach
- 2 sprigs fresh thyme
- Twist of orange
- Cherries (optional)
- Ice
- Tonic, sparkling water, or ginger soda to lighten it (optional)
Tools & Timing
- Cool cocktail glasses
- Martini shaker (or large jar/mixing bowl and strainer)
- Strainer
- Ready in two shakes
Background
At the end of summer, I try to incorporate peaches into a lot of my recipes! (Peaches, I’ll miss you until next summer…). The more I’ve baked with peaches, the more I’ve realized that I love the woodsy, rich element that thyme brings to those recipes…with these thoughts in mind, I set about to concoct a new variation of one of my go-to favorite drinks: the Old Fashioned.

Step-by-step
- Combine simple syrup, bitters, and bourbon (if you’re fancy and have a martini shaker…awesome! If you do this is a jar with a lid and use a strainer…awesome!)
- Add the juice of half of your peach – using a strainer, squeeze the peach over your syrup/bourbon mixture (really press the peach half against your strainer – you can get a lot of juice!)
- Add leaves from fresh thyme (roll them in your fingers as you drop them in to release some of their oils).
- Shake it up and strain into cocktail glasses with ice (if you’re a traditionalist, one large cube is the way to go for an Old Fashioned).
- Garnish with the other sprig of thyme, twist of orange, and cherry.
